Coleslaw and Cashew Mayo

 

Apricot Delight

  • Serves:

 

 

APRICOT LAYER

Ingredients:

1½ c dried apricots,

 

Method:

  1. stewed until soft.

  2. Blend to a puree and spread over the cooked pie crust.

 

DATE LAYER

Ingredients:

1 c dates
1/3 c raw cashews
1/2 c water
4 T cornflour
2 c water (extra)
1 t vanilla


Method:

  1. Cook dates in 1/2 c water till the water is evaporated.

  2. Blend cashews in extra water (2 c) until smooth.

  3. Add date mixture and other ingredients.

  4. Blend till fine.

  5. Cook in saucepan over low heat.

  6. Stir till thickened.

  7. Pour over apricot filling.

  8. Refrigerate.

  9. Serve with Pear Cream.

 

 


YUMMY PIE CRUST

Ingredients:

5 slices wholemeal bread (2¼ c pieces)
½ c dates, softened in ½ c hot water
½ c desiccated coconut

 

Method:

  1. Blend the bread.

  2. Add the other ingredients.

  3. Mix well.

  4. Add water if needed.

  5. Press into a lightly oiled pie dish.

  6. Bake in moderate oven for about 15 mins till firm and lightly browned.

 

 


PEAR CREAM

Ingredients:

1 c raw cashews
2 t vanilla essence
1 x 800g can of pears in its own juice
Pinch of salt

 

Method:

  1. Blend all of the ingredients together.
