Coleslaw and Cashew Mayo

 

Apricot Rolls

Ingredients:

125g dried apricots
½ c honey
1 c soy milk powder or
½ c water coconut milk powder
1 T wheat germ
½ c blanched almonds, chopped
½ c coconut
½ c sultanas
1 t grated lemon rind
1 t lemon juice
1 t orange juice

 

Method:

  1. Chop apricots.

  2. Combine with water and honey.

  3. Simmer for 10 minutes to soften. Do not drain.

  4. Add remaining ingredients and mix well.

  5. Divide mixture into portions to make rolls approx 15 cm (6 in) long.

  6. Roll in extra coconut and refrigerate for at least 2 hours.

  7. Slice into pieces 7 mm thick.

  8. Alternatively, they can be rolled into logs (15mm thick) and cut into bite size pieces.
