Coleslaw and Cashew Mayo

 

Carob Custard Dessert

(no added sugar or fat)

 

  • Preparation time:
  • Cooking time:
  • Serves:

 

 

Ingredients:

4 c soy milk ½ t salt
¼ c light carob powder 2 t coffee substitute*
¾ c softened dates 1 t vanilla
¼ c cornflour

 

Method:

  1. Blend all ingredients in 2 cups of the soy milk.

  2. Pour into a saucepan with the remaining soy milk.

  3. Stir over medium heat until thickened.

  4. Pour into serving dish and cool.

 

 


SWEET CREAM

Ingredients:

¼ c cashews* or blanched almonds or sunflower seeds
½ c hot water
3 T honey
¼ t sea salt
1 can coconut cream
1 t vanilla
¼ c cornflour

 

Method:

  1. Blend all ingredients in blender until smooth.

  2. Heat in saucepan until thickened, stirring constantly.

  3. Cool a little, then pour onto carob custard dessert.

  4. Refrigerate.

 

Note:

  • Cashews are preferred.

  • Coffee substitute — Ecco, Caro
