Pear Cream Topping

 

Carob Pudding

 

  • Preparation time:
  • Cooking time:
  • Serves:

 

 

Ingredients:

2 cups milk
1 cup water
1/3 cup cashews
4 tblsp cornflour
4 tblsp carob powder
¼ tsp salt
2 tblsp honey
½ tsp vanilla

 

Method:

  1. Blend all ingredients in a blender or food processor.
  2. Blend only a few seconds so that the nuts are not blended finely, leaving small pieces in the mixture.
  3. Place mixture in saucepan and bring to the boil over medium heat stirring constantly.
  4. When mixture has thickened, remove from heat, cool slightly then place in dish and refrigerate to chill.

 

Options for an even yummier desert...
Pudding can be placed in a pie crust or eaten alone. It may also be topped with your favourite topping..... cashew cream, cream or ice cream.
