Coleslaw and Cashew Mayo

 

Buckwheat Oat Waffles

 

  • Preparation time:
  • Cooking time:
  • Serves:

 

 

Ingredients:

2¼ c water
1½ c rolled oats
½ c buckwheat flour*
¼ c soy flour
1 T brown sugar (optional)

 

Method:

  1. Blend all ingredients in blender till smooth.

  2. Let batter stand for 10 mins, till thickened.

  3. Blend batter again before pouring onto a hot non stick waffle iron.
    If you are not using a non stick waffle iron, lightly oil it first.

  4. Bake on medium high setting. 

  5. Do not lift lid too soon.

  6. Serve hot with your favourite waffle topping.

 

*Buckwheat is not a grain, but the seed of a herb. It is widely used in Korea and Japan, where it is known as “longevity buckwheat”. It is said to maintain skin youthfulness. The flour is often made into noodles. It is a good alternative for those with a wheat allergy.
