1 Round Spring Cake Pan
1 Electric Mixer or Blender
● Base
Ingredients
125g melted Nuttelex
butter
3/4 packet of dry biscuits or favourite sweet biscuits
● To Make The
Base:
- Crush the biscuits
so that it is only crumbs with no large pieces.
- Melt the butter
- Pour butter into the
biscuit crumbs and mix thoroughly until all biscuits are
coated and resemble wet sand.
- Press mixture into a
round spring pan covering the sides as well and then
refrigerate until needed.
● Filling
Ingredients
1 pkt of Lieber’s Lemon
Jel crystals.
3/4 Cup of Boiling Water
1 330g Can of Sweetened Condensed Soy Milk (Soymilke)
2 med RIPE Lemons Juice and Rind (NO GREEN ON THEM AT ALL)
1 250g Pack of Tofutti Cream Cheese
● To Prepare
The Filling:

Cut
cheese into cubes and place in the blender/bowl

Juice the Lemons and pour it into the bowl/blender

Add
the lemon rind
-
Pour
the Milk into the bowl/blender
-
Dissolve the Jel in the Boiling Water until completely
dissolved.

Pour
Jel into the bowl/blender
-
Mix
until smooth. (about 6-7 mins bowl or 2-3 mins for blender)

Pour
mixture onto the base and place back into the fridge to set.
**For best results leave
it in the fridge overnight with a Minimum of 4 hours.
NOTES:
-
If you can’t get the
Jel crystals, pour blended filling into a med saucepan.
Add 1/4 tsp. of Agar Agar and bring mix to the boil stirring
continuously. Remove from heat and allow to stand for
1 min. Pour mixture into base and return to the fridge.

If you cannot get
sweetened condensed soymilk, you can make your own using the
supplied recipe.

Any butter or margarine
will do so long as it is vegan. Apply the same thing
to the sweet or dry biscuits.

For non-vegan or
vegetarian persons, simply use standard ingredients
purchased at the local supermarket, however vegan is best.
