Gluten Free Nut Patties

Ingredients:

3 cloves garlic, chopped fine
2 medium onions, chopped fine
2 large potatoes
1 c rice cake crumbs*
1 T parsley, chopped finely
3 t Massel beef style powder
½ c rolled oats
1 t salt
¼ c rice flour
2 T soy flour
¼ c buckwheat flour
1 T olive oil, extra virgin
1 c ground pecan or walnuts
1 T wheat free soy sauce**
¼ c fresh chives or 1 t dry

extra rice flour for coating
extra oil for frying

 

Method:

  1. Boil potatoes and mash. Keep the water in case the mixture is too dry.

  2. In a saucepan, fry onion and garlic in olive oil.

  3. Add all the other ingredients.

  4. Mix well.

  5. Form into patties.

  6. Coat them in extra rice flour.

  7. Fry them in a little oil.

 

* Whiz rice cakes in a blender till fine. Make up 1 cup.

** Wheat free soy sauce = Organic Tamari
