Gluten Free Carob Almond Cookies

 

Gluten Free Carob Almond Cookies

(No added fat)

Ingredients:

Dry Ingredients:

2 T buckwheat flour
2 T rice flour
1 c coconut
1 c almonds, roughly ground or finely chopped
2 T carob powder
1 t coriander
¼ t salt
2 t ginger powder

 

Moist Ingredients:

½ c pureed cooked apple
1 c dried dates (softened)*
1 T honey
1 t vanilla

 

Method:

  1. Combine all dry ingredients.

  2. Add moist ingredients.

  3. Roll into balls and flatten with a fork.

  4. Place on greased tray dusted with rice flour.

  5. Bake in moderate oven for 20-30 mins.

* Cover with water. Heat in small saucepan till water has evaporated and dates softened — till it turns into a puree.
