Coleslaw and Cashew Mayo

 

Gluten-Free Millet Pudding

 

  • Preparation time: 10 mins
  • Cooking time: 30 mins
  • Serves:

 

 

Ingredients:

¾ c millet, uncooked
4 c soy milk
1/3 c raisins
1/3 c dates, chopped
2 t vanilla extract

 

Method:

  1. Preheat oven at 185°C.

  2. In a medium sized casserole dish, combine all ingredients.

  3. Mix well.

  4. Cover the dish.

  5. Bake for about one hour or till golden brown on top.

  6. Stir the mixture through after 30 mins of baking.

  7. Serve warm or cold, with extra soy milk or pear cream topping.

  8. Garnish with mandarin or orange segments.
