1 small onion, diced
1 medium potato, diced
1 medium carrot, diced
1½ c water
1 stick celery, diced
1 T olive oil
2 T raw cashews, ground
½ t salt
2 t Massel beef style powder
Method:
Fry onion in the oil.
Add all other ingredients,
except the cashews, and cook till vegetables
are soft.
(Alternatively, omit Step 1 and
cook onion and oil with other ingredients.)
Whiz cashews in blender.
Add all other ingredients
to blender.
Whiz again till smooth. (Or
use a stick blender for this step.)
If too thick, add a little hot water.
