Coleslaw and Cashew Mayo

Spinach & Tofu Patties

Ingredients:

4 cloves garlic, diced
1 medium onion, diced
½ bunch spinach (1½ c)*
1 c ground rice cake
1 T parsley, chopped finely
3 t Massel beef style powder
½ t ground thyme
½ t salt
2 T rice flour
2 T soya flour
2 T potato flour
1 T olive oil, cold pressed
1 c firm tofu, mashed extra rice flour for coating

 

Method

  1. Cut spinach into strips. Steam till tender. Drain.

  2. Save the water in case the mixture is too dry.

  3. Cook onion and garlic in oil, till slightly brown.

  4. Add spinach, fry a little longer.

  5. Combine with all the seasonings and other ingredients.

  6. Mix well. Form into patties and coat with the extra rice flour.

  7. Cook patties in a little oil.

 

*You can substitute spinach with Silverbeet, using just the green part, or use frozen spinach.
Another alternative is to use steamed, drained zucchini instead of spinach or Silverbeet.
evaporated and dates softened — till it turns into a puree.
