2 c cooked brown rice
1 stick celery, finely diced
2 c crumbed rice cakes
2 medium onion, finely diced
2 T soya sauce
½ c chopped walnuts
1 T soya flour
1 T potato flour
2 T besan (chickpea) flour
½ t sage
1 t sweet basil
½ t salt
½ c water extra rice flour for shaping
Method:
Simmer onions and celery in the water and
soya sauce.
When tender, add to rice.
Add remaining ingredients and mix well.
On a plate covered with rice flour, place
heaped teaspoonsful of the mixture.
Roll with your hands to form frankfurts.
Alternatively, roll a long sausage and cut
into finger lengths.
Fry in a little oil in a non-stick pan.
Makes approx. 50 small frankfurts.
For best results, use Vitasoy
milk in the red and white carton.
