Coleslaw and Cashew Mayo

 

Polynesian Slice

 

  • Preparation time: 20 mins
  • Cooking time: 30 mins
  • Serves: 12-20

 

 

Ingredients:

Crust:

3 cups Rolled Oats
1 cup Wholemeal Flour
1 cup Desiccated Coconut
1/2 cup Ground Mixed Nuts
1 tsp Salt
3/4 cup Orange Juice
1/4 cup Honey and Ginger
2 tblsp Olive Oil or Tahini

 

Filling:

1 can Crushed Pineapple (440g)
2 cups Chopped Dates
1 tsp Vanilla Essence
1 pinch Salt

Topping:

11 tsp cinnamon
1/2 cup coconut
1/4 cup peppitas
1/2 cup ground mixed nuts (NOT salted)

 

Method:

Base:

  1. Mix all ingredients well creating a crumbly mixture.

 

Filling:

  1. Place all the filling ingredients in a saucepan and simmer until it resembles a mash or stew. (like stewed apples)
  2. Put 1/2 of base mix onto a flat baking tray or slice try and press it down firmly.
  3. Spread the filling evenly on top of the base and add the remaining base mix as the top layer, then press it down slightly.
  4. Mix all of the TOPPING ingredients well together and spread evenly over the top layer.
  5. Bake at 180 degrees for 30 minutes.
  6. Serve with coconut cream or whipped soy cream.
