COOKWARE ITEMS:
1 30cm slice tray
INGREDIENTS:
For the Slice:
1 Pkt Dry/Sweet vegan biscuits
1 lemon – Juice and Rind (zest)
85g desiccated coconut
115g butter or margarine (Nuttelex)
½ tin sweetened condensed soy milk
METHOD:

Crush biscuits in fine crumbs.

Place in a medium mixing bowl
and then add the lemon rind and the coconut.

Mix well
-
In a saucepan, place the condensed
milk and butter.

Heat until melted stirring continuously.

Pour milk and butter into the
bowl of biscuits, coconut and rind mix.

Mix well making sure all of the
ingredients are wet.

Press the mix firmly into a slice
tray and allow to cool.
Icing to Cover:
2 cups of soft Icing sugar (more
if necessary)
Lemon Juice
½ cup desiccated coconut
METHOD:

Cut the slice into small rectangles

In a cup or small bowl, place
the icing mix and pour in 2-3 tablespoons of the
lemon juice.

Mix well keeping the icing thick.

Add more icing sugar or more
lemon juice as needed but make sure that it is kept
fairly thick.

Spread the icing over the entire
slice and sprinkle with the coconut.
-
Place in the refrigerator to
fully cool and set.
NOTE: Keep refrigerated
as it will become very sticky when heated.
