4 c chopped fruit, fresh or frozen
(e.g. — strawberries, blueberries, peaches etc)
3 c apple juice
4 T cornflour
1 c currants
Extra juice to blend the cornflour
Method:
Thaw out
frozen fruit if used.
In a medium
saucepan, bring apple juice and currants to
boil.
Simmer
for 5 min.
Blend
with stick blender.
Blend
cornflour with some
extra juice.
Slowly
pour into saucepan, stirring till the mixture
becomes thick.
Serve
hot or cold on waffles or toast.
Delicious
with banana slices, jam, coconut, peanut butter
or pear cream.
