Ingredients:
1 kg diced steamed potatoes ½ c onions, spring onions or shallots, chopped ¾ c celery, chopped finely
Dressing:
1 avocado 2 cloves garlic ½ t salt ½ t dill 1 T lemon juice 2 t olive oil
Method:
Dice potatoes when they are cold for best results.
Blend the ingredients for the dressing until smooth.
Toss together potato, onion and celery.
Mix in the dressing.
Refrigerate until needed.
If avocados are not available, the Sunflower Dressing may be used instead.
