Pasta and Avocado Salad

 

Pasta and Avocado Salad

Ingredients:

1½ c dry pasta spirals
3 T low fat mayonnaise
2 t tahini (sesame paste)
½ a red capsicum, diced
1 orange, diced
1/3 c spring onion, chopped
1 medium avocado, diced
Toasted sunflower seeds or pumpkin seeds

 

Method:

  1. Cook pasta according to instructions on packet.

  2. Drain and cool.

  3. Mix mayonnaise and tahini.

  4. Fold mayonnaise mixture into pasta.

  5. Add capsicum, orange and spring onion.

  6. Add avocado and mix gently together.

  7. Add toasted seeds.

 

A one-dish meal that’s filling and full of anti-oxidants.
