Ingredients:
6 c potatoes, diced
½ t mint
2 c onions, chopped
1 T chicken style powder
1 T olive oil
7 c water
2 c leeks, chopped
3 cloves garlic, diced
2 T parsley ½ t basil
1 c coconut cream
Method:

Place all the
ingredients except the coconut cream in a large
saucepan.

Boil until very tender.

Add coconut cream.

Blend in processor till
smooth.
