Creamy Cauliflower Soup

 

  • Preparation time: 15 minutes
  • Cooking time: 35-40 minutes
  • Serves:  4

  • Note: 1 metric tablespoon = 20 ml or 4 teaspoons

 

Ingredients:

750g cauliflower roughly chopped
A handful of chopped parsley

Creamy Base:

750ml water
1 onion cut into quarters
Salt to taste
¾ c raw cashew nuts

 

Method:
  1. Place all ingredients into the saucepan.

  2. Cook until the vegetables are tender.

  3. Pour into blender (including cooking water) and blend until smooth and creamy.
