Ingredients:
3 c celery, chopped
1 small onion, chopped
1½ c soy milk
½ c celery leaves, chopped
3 T corn flour
3 t chicken style powder
2 T white flour
3 cloves garlic, chopped
1 T packed parsley, chopped 7 c water
½ t salt
Method:
- In a medium saucepan, cook celery, onion and garlic in
7 c water.
- Bring to the boil.
- Cook gently till
vegetables are tender.
- Add rest of the ingredients.
- Blend the soup with an electric stick blender.
- Return to heat.
- Bring to the boil, stirring for
2 mins.
- Remove from heat.
**If the soup is to be reheated, do not boil. It can
also be reheated in a double boiler.
