Cream of Celery Soup

 

Cream of Celery Soup

 

  • Preparation time:

  • Serves: 8

 

 

Ingredients:

3 c celery, chopped
1 small onion, chopped
1½ c soy milk
½ c celery leaves, chopped
3 T corn flour
3 t chicken style powder
2 T white flour
3 cloves garlic, chopped
1 T packed parsley, chopped 7 c water
½ t salt

 

Method:

  1. In a medium saucepan, cook celery, onion and garlic in 7 c water. 
  2. Bring to the boil. 
  3. Cook gently till vegetables are tender.
  4. Add rest of the ingredients.
  5. Blend the soup with an electric stick blender.
  6. Return to heat. 
  7. Bring to the boil, stirring for 2 mins.
  8. Remove from heat.

**If the soup is to be reheated, do not boil.  It can also be reheated in a double boiler.
