4 c zucchini, chopped
1½ c potatoes, chopped
1 c onion, chopped
2 sticks celery with leaves, chopped
¼ c parsley, chopped
½ c red lentils
2 t olive oil
¼ t each of mint, basil, turmeric
1 T chicken style powder
dash cayenne pepper (optional)
1 T tomato paste
10 c water
1 t salt
Method:
Bring all ingredients to the boil.
Boil for 20 mins.
Turn to low heat.
Cook a further 15 mins.
Can be served with rice or pasta cooked separately.
