Ingredients:
2 medium heads of broccoli, cut into florets
¼ cauliflower, cut into floret
¼ pumpkin, chopped
¼ small cabbage, chopped
2 large carrots, chopped
2 medium zucchinis, chopped
2 medium potatoes, chopped
2 medium onions, chopped
2 sticks celery, chopped
1½ c Italian soup mix
½ c yellow split peas
1 t turmeric
1 t mint (dry)
½ t basil (dry)
1 T cold pressed olive oil
1 T vegetable stock powder
2 t salt
2 T tomato paste
4½ litres water
Method:

Soak yellow split peas and soup mix in water
overnight.

Rinse.

In a large saucepan, add all other ingredients and
water.

Bring to the boil.

Lower heat to high simmer.

Cook for 1½ to 2 hours, till beans are tender.

Check for seasoning.
Makes 10 large servings.
