Ingredients:
1 large onion
½ bunch spinach
½ small cabbage
500g frozen peas
½ small lettuce
3 t tomato paste
1 stick celery
2 t cold pressed olive oil
½ bunch endives
½ t turmeric
½ small cauliflower
¾ t salt
370 g firm tofu
5 litres water
Method:

Wash all the vegetables and chop them into small
pieces

Place all the ingredients, except the tofu, into a
large pot.

Bring to the boil for 15 mins.

Reduce heat to half and cook for one hour on high
simmer.

Halfway through cooking, mash the tofu and add to
the soup.

Check for seasonings before serving.

Season to taste.
