Ingredients:
3 c
coconut
½ c almonds, crushed
1 c quick oats
¼ c brown sugar
3 t egg replacer
1 heaped T baking powder substitute*
1 c unbleached flour
Juice of 2 oranges
½ c tahini
½ c honey
2 t vanilla
Extra whole almonds, about 20.
Extra honey
Method:

In a
large bowl, place all the dry ingredients.

Mix.

Add the other ingredients.

Mix.

Form into cookies.

Cut the whole almonds in half.

Warm some honey in a small bowl.

Dip the almonds in the honey and place
them in the middle of each cookie.

Oil baking tray and dust lightly with flour.

Bake at 180ºC till golden brown.
Makes about 40 cookies.
