Carrot and Caraway Loaf

 

  • Preparation time:
  • Cooking time: 40-45 Minutes
  • Serves: 
  • Note: 1 metric tablespoon = 20 ml or 4 teaspoons

 

Ingredients:

In a bowl:

1 1/2c cashew nuts finely ground
1 1/2c bread crumbs
1 1/2t caraway seeds
1/2kg peeled carrots blended into little pieces not pureed or mashed

Mix together

 

In a pot sauté:

1T oil
1 large onion
2 cloves of crushed garlic
1/4c water
Juice of 1/2 lemon
1T tahini
1t vegemite
1t salt

 

Method:
  1. Pour the wet mixture into the dry ingredients.

  2. Mix very well.

  3. Pour the mixture into a medium casserole dish.

  4. Make sure that it well spread into the corners and smooth on the edges.

  5. Bake at 180 degrees for 40-45 minutes.

 

NOTE:

  • To improve the flavour, refrigerate overnight.

  • The loaf may be served either hot or cold.

  • Delicious with a fresh salad or as a sandwich filling.
