Pineapple Date Bars

  • Serves: 
  • Note: 1 metric tablespoon = 20 ml or 4 teaspoons

 

Ingredients:

The Crust:

3c Quick oats
1 1/4c whole wheat flour
1c unbleached plain flour
1 1/2c shredded coconut
3/4c walnuts chopped
3/4c oil
Pinch of salt
3/4c orange juice freshly squeezed

 

The Filling:

2c dates chopped
3x440g tin of pineapple pieces drained and blended
3/4c pineapple juice
1 1/4t vanilla essence

 

Method:

For the Crust:

  1. To make the crust mix all ingredients together.


  2. Press half the crust into the bottom of a oiled 9x13 baking dish or line it with paper. And reserve the other half for the topping.

 

For the filling:

  1. Cook all ingredients together until all the liquid is absorbed.

  2. Spread the filling onto the crust.

  3. Top with the remaining crust.

  4. Bake at 180 degrees for 40 min or until brown.
