Ingredients:
BASE
1½ c quick oats ¾ c coconut 12 dates
Method:
Soften dates in 1 c boiling water.
Blend.
Add other ingredients.
Blend in food processor for 1 min.
Press out onto a greased tray.
Bake at 200°C for about 15 mins or until cooked.
FILLING
¾ c dates 2 c pineapple juice ½ c lemon juice ½ t sea salt 1 t vanilla 1 t grated lemon rind 1/3 c cornflour mixed in ½ c pineapple juice
Blend the dates in the pineapple juice.
Add all these ingredients to the blended dates. Process again.
Cook until thick.
Spread over and cooked base and cool.
Cut into slices.
