Date, Apricot, and Chia Bliss Balls



  • Preparation time: 45 mins
  • Cooking time: 1 Hour Setting Time
  • Serves: Makes 12

 

Ingredients:

1/2 cup coarsely chopped dried Apricots
1/2 cup coarsely chopped Dates
1/4 cup desiccated Coconut
1 Tbsp Chia seeds
1 Tbsp Pepitas (Pumpkin seeds)
1 Tbsp Nuttelex

Extra desiccated Coconut for coating of balls

 

Method:
  1. Place the apricot in a heatproof bowl.
  2. Cover with boiling water.
  3. Set aside for 15 mins to soak.
  4. Drain well.
  5. Place the apricots, dates, coconut, chia, pepitas, and nuttelex in a food processor and process until a smooth paste forms.
  6. Place in the fridge for 30 mins or until mixture becomes firmer.
  7. Line a baking tray with baking paper.
  8. Roll a teaspoon of mixture into a ball.
  9. Lightly coat in extra coconut and place on the lined try.
  10. Repeat with remaining mixture.
  11. Place in the fridge for 1 hour to set.
