Method:
- Place the apricot in a heatproof
bowl.
- Cover with boiling water.
- Set aside for 15 mins to soak.
- Drain well.
- Place the apricots, dates,
coconut, chia, pepitas, and nuttelex in a food
processor and process until a smooth paste forms.
- Place in the fridge for 30 mins
or until mixture becomes firmer.
- Line a baking tray with baking
paper.
- Roll a teaspoon of mixture into
a ball.
- Lightly coat in extra coconut
and place on the lined try.
- Repeat with remaining mixture.
- Place in the fridge for 1 hour
to set.
