Breadcrumb Brownies

 

Breadcrumb Brownies

Ingredients:

1 c cashews
½ c honey
1½ c fresh orange juice
2 t vanilla
1-2 T light carob powder
1 T tahini
2¼ c soft wholemeal breadcrumbs

 

Method:

  1. Blend all the ingredients except breadcrumbs in blender.

  2. Pour into mixing bowl.

  3. Add the breadcrumbs.

  4. Mix and pour into oiled baking dish.

  5. Bake at 180ºC for 40-45 minutes.

  6. Allow to cool.

  7. Make Carob Fudge Frosting.

(Chopped walnuts may be added to the mixture before baking.)

 

 

CAROB FUDGE FROSTING

Ingredients:

½ c water
1 c dates
¼ c crunchy peanut butter
1-2 T light carob powder
2 t brown sugar
1 t vanilla
2 T soy milk powder
1 block copha, melted

 

Method:

  1. In a saucepan, heat water and dates till soft.

  2. Remove from heat and blend.

  3. Add all the other ingredients except the copha into the blender cup.

  4. Blend.

  5. Add melted copha.

  6. Blend well.

  7. Spread this carob frosting over the Brownie base.

  8. Sprinkle with chopped nuts.

  9. (optional) Cool in fridge and cut into pieces.
