Ingredients:
1 c cashews
½ c honey
1½ c fresh orange juice
2 t vanilla
1-2 T light carob powder
1 T tahini
2¼ c soft wholemeal breadcrumbs
Method:

Blend all the ingredients except breadcrumbs in
blender.

Pour into mixing bowl.

Add the breadcrumbs.

Mix and pour into oiled baking dish.

Bake at 180ºC for 40-45 minutes.

Allow to cool.

Make Carob Fudge Frosting.
(Chopped walnuts may be added to the mixture before
baking.)
CAROB FUDGE FROSTING
Ingredients:
½ c water
1 c dates
¼ c crunchy peanut butter
1-2 T light carob powder
2 t brown sugar
1 t vanilla
2 T soy milk powder
1 block copha, melted
Method:

In a saucepan, heat water and dates till soft.

Remove
from heat and blend.

Add all the other ingredients except the copha into the
blender cup.

Blend.
-
Add melted copha.
-
Blend well.
-
Spread this carob frosting over the Brownie base.

Sprinkle with chopped nuts.

(optional) Cool in fridge
and cut into pieces.
