Rhubarb & Berry Crumble

Preheat oven to 180 degrees Celsius

Ingredients:

1 bunch rhubarb
250g berries
1 orange, juiced
1/3 cup sugar


Method:
  1. Boil orange juice and sugar
  2. Stir until sugar dissolves.
  3. Add chopped rhubarb and simmer 5 minutes.
  4. Take off heat and place in pie dish.
  5. Top with berries.
  6. Cool slightly then top with crumble mix.



Crumble:

4 tblsp brown sugar
4 tblsp rolled oats
6 tblsp SR flour
6 tblsp coconut
2 tblsp coconut oil
Slivered almonds


Method:
  1. Put dry ingredients into a bowl.
  2. Rub coconut oil through mixture to form a crumb.
  3. Sprinkle over fruit.
  4. Top with almonds.
  5. Bake in oven 20 minutes.
