Treacle Almond Slices

 

Treacle Almond Slices

Filling

Ingredients:

½ c treacle
200g ground almonds
1/3 c lemon rind, grated
1/3 c orange rind, grated
½ c coconut (fine)
Extra coconut if needed 

 

Method:

  1. Place all ingredients in a large bowl. 

  2. Mix well to a soft spreadable texture.

 

Pastry

Ingredients:

3 T cold pressed olive oil
2 drops almond essence
3 t egg replacer
½ c wholemeal plain flour
1/3 c fresh lemon juice
1½ c unbleached white plain flour
¾ t aniseed
3 t healthy baking powder*
¼ c honey
¼ c fresh orange juice
Extra juice of one orange

 

Method:

  1. Preheat oven at 200°C.

  2. In a cup, mix egg replacer with 1 T lemon juice. 

  3. Add the rest of the juice.

  4. Prepare baking tray, approx 15 x 30 cm. 

  5. Spray with oil spray.

  6. Dust with flour. 

  7. Shake off extra flour.

  8. In a large bowl, place the flours and baking powder. 

  9. Mix well.

  10. Add the other ingredients, and the egg replacer mixture. 

  11. Add orange juice gradually.

  12. Knead for 3 minutes.

  13. Let it rest for another 3-5 minutes.

  14. Roll out half the pastry to fit the tray.

  15. Trim the edges.

  16. Spread filling evenly on top.

  17. Roll out the other half to place on top of the filling.

  18. Bake till pastry starts to get colour.

  19. Glaze with 1 t honey mixed with 2 t hot water.

  20. Cut into slices.

 

* a healthy gluten free baking powder free of aluminium is available from the health store.
