Filling
Ingredients:
½ c treacle
200g ground almonds
1/3 c lemon rind, grated
1/3 c orange rind, grated
½ c coconut (fine)
Extra coconut if needed
Method:

Place all ingredients in a large bowl.

Mix well to
a soft spreadable texture.
Pastry
Ingredients:
3 T cold pressed olive oil
2 drops almond essence
3 t egg replacer
½ c wholemeal plain flour
1/3 c fresh lemon juice
1½ c unbleached white plain flour
¾ t aniseed
3 t healthy baking powder*
¼ c honey
¼ c fresh orange juice
Extra juice of one orange
Method:

Preheat oven at 200°C.

In a cup, mix egg replacer with 1 T lemon juice.

Add the rest of the juice.

Prepare baking tray, approx 15 x 30 cm.

Spray
with oil spray.

Dust with flour.

Shake off extra
flour.

In a large bowl, place the flours and baking powder.

Mix well.
-
Add the other ingredients, and the egg replacer
mixture.

Add orange juice gradually.
-
Knead for 3 minutes.
-
Let it rest for another 3-5
minutes.

Roll out half the pastry to fit the tray.

Trim the
edges.
-
Spread filling evenly on top.
-
Roll out the other half to place on top of the
filling.

Bake till pastry starts to get colour.

Glaze with 1 t honey mixed with 2 t hot water.

Cut into slices.
* a healthy gluten free baking powder free of aluminium
is available from the health store.
