Cashew Loaf with Tomato Salsa

Ingredients:

1½ T olive oil
1 medium onion, chopped
1 medium tomato, chopped
1 medium green pepper, chopped
1 c roasted, unsalted cashews
1 c blanched almonds
1 medium carrot, grated
2 t Massel chicken style powder
1 t salt
1 c cooked brown or white rice
1 T savoury yeast flakes
2 t egg replacer
1 t dried rosemary herb

 

Method:

  1. In oil, cook onion till golden brown.

  2. Add capsicum and tomato.

  3. Bring to the boil and cook gently for 10 mins till soft. Cool.

  4. Blend or process cashews and almonds till fine.

  5. Combine onion mixture, nuts, and rest of ingredients.

  6. Press mixtures evenly into prepared pan.

  7. Bake in moderate oven for 50-60 mins till lightly browned.

  8. Serve with tomato salsa.

 


TOMATO SALSA

Ingredients:

2 white onions, chopped
¼ t dill
6 medium tomatoes, chopped
¼ t oregano
2 t Massel chicken style powder
¼ t basil
1½ T olive oil

 

Method:

  1. Cook onion in oil till lightly browned.

  2. Add tomatoes and fry together.

  3. Add seasonings and herbs.

  4. Stir well to mix.

  5. Cook to a creamy sauce
