Ingredients:
2 medium potatoes, peeled and chopped
2 eggs
1 large tomato, chopped
¼ c milk or soy milk
1 t salt
1 t garlic powder or 2 cloves of garlic
Method:
- Put these ingredients into a blender and whiz.
- Pour
into a large mixing bowl.
- Then you can use your imagination or add what you have in
your cupboard or fridge for example:
Ingredients:
½ c grated cheese
2 spring onions finely chopped
½ onion finely chopped
1 c frozen or canned corn kernels
1 c frozen peas
½ c chopped coriander
1 c cubed pressed tofu
1 c cubed Sanitarium Nutmeat
1 c cooked chick peas
Method:
- Choose 3 or 4 ingredients from the list above.
- Gently stir into the potato mixture.
- Pour into a
greased baking dish and bake at 190° C uncovered for 30
minutes or until golden brown.
- Cut when cool.
