Ingredients:
1 tablespoon oil
1 red onion, cut into eighths
1 medium carrot, sliced
½ red capsicum, large chunks
½ green capsicum, large chunks
1 cup sliced beans
Sliced Tofu, Quorn Tender pieces or another meat substitute
440g can unsweetened pineapple pieces, drained, juice re
served
1 T tomato paste
1 T lemon juice
1 T vinegar
2 T brown sugar
1 T Tamari soy sauce (gluten free)
1 tablespoon corn flour
½ cup water
brown rice, to serve
Method:
- Heat oil in frypan and sauté onion, carrot, capsicum
and beans for 2-3 minutes.
- Add tender pieces (or Tofu, meat substitute etc.)
and sauté a further minute.
- Add pineapple juice, tomato
paste, lemon juice, sugar and soy sauce.
- Bring to boil, reduce heat and add combined flour
and water.
- Stir until mixture boils and thickens.
- Add
pineapple, heat through and serve with brown rice.
