Traditional Corn Fritters


  • Preparation time: 40 mins
  • Cooking time: 30 mins
  • Serves: Makes 10 large fritters. 

 

Ingredients:

1 Medium Onion, diced.
1 Tbsp Olive or Sunflower Oil.
2 cups of frozen or canned corn (no need to defrost frozen corn).
1 cup Wholemeal Flour.
1/2 cup water.
3 Tbsp Sweet Chilli Sauce.
1/2 cup fresh coriander, chopped.
Extra oil for frying.

 

Method:
  1. Add 1 Tbsp oil to a hot frying pan and sauté the onion.
  2. Mix corn, flour, water, sweet chilli sauce, onion and coriander into a mixing bowl.
  3. Let the mixture sit for around 20 mins in the fridge, then stir again. This provides a more consistent and adhesive mixture.
  4. Fry 1/4 cup scoops with a little oil in a hot non-stick pan.
  5. Cook for around 3 minutes each side or until golden brown.
  6. Serve immediately with any salad of your choice or vegetables.
