Corn & Pepper Fiesta

Ingredients:

2 tins whole kernel sweet corn
1 red bell pepper
4 spring onions
1 avocado peeled and cubed
4 The lime juice
1 t olive oil
1/4 salt


Method:
  1. Drain liquid from the can and add the corn to a serving bowl.
  2. Finely chop the spring onions and bell pepper.
  3. Combine all ingredients in the bowl

Tip: You can also use fresh if frozen corn under hot water for about 30 seconds to defrost it. The corn kernels does not need to be cooked.
