jasmine rice
1½ c water
1 small onion, chopped small
1 medium carrot, chopped small
1c button mushrooms, each cut into 3 pieces
2 t cold pressed olive oil
2 dashes of cayenne pepper
¼ t turmeric
¼ t salt
1 T Massel chicken style powder
½ c broccoli florets*
½ t dried coriander
1 T chopped parsley
Method:
Put all
the ingredients into a medium sized saucepan.
Follow the instructions on the rice packet to cook the
rice.
Serve on a bed of lettuce leaves garnished with
orange rings, sliced beetroot and sliced tomatoes.
* Alternatively, frozen peas or beans can be used.
