Garlic Mushrooms and Spinach

 

Garlic Mushrooms and Spinach

Ingredients:

2 tablespoons olive oil
40g butter
500g cup mushrooms, sliced
3 cloves crushed garlic
1 tablespoon chopped fresh flat-leaf parsley leaves
350g baby spinach
2 tablespoons toasted pine nuts

 

Method:

  1. Heat oil and butter in large frying pan over high heat.

  2. Add mushrooms.

  3. Cook, stirring occasionally, for 10 to 12 minutes or until browned.

  4. Add garlic and parsley.

  5. Cook, stirring, for 30 seconds, or until fragrant.

  6. Add half the spinach to pan.

  7. Toss through mushroom mixture.

  8. Top with remaining spinach. Cover pan.

  9. Cook for 1 to 2 minutes or until wilted.

  10. Season with lemon pepper.

  11. Serve sprinkled with pine nuts.
